Caramelized squares with chopped almonds

Ingredients for 40 to 45 small squares:

Pastry :

200 gr of flour
100 gr of soft butter
50 gr of sugar
5 water cases

Garnish :

1 case of fresh cream
1 case of honey
75 gr of sweet butter
100 gr of sugar
150 gr of flaked almonds


Dough :

Put in a bowl, mix flour, sugar, salt, give a spoon to this mixture
Add the butter cut in small pieces and start kneading. Add the water little by little to form a ball.
Put the dough in the fridge for 30 minutes.

Preheat the oven to 180 °.

The filling:

Garnish a 20/30 cm mold with sulphide paper.
Spread the broken dough the size of your mold but thin enough and cook for 10 minutes.
Meanwhile, in a saucepan heat the cream, honey, butter and sugar.

As soon as the mixture is melted and smooth, add the flaked almonds.

Spread this mixture over the precooked dough and return to the oven at 180 °, for 20 minutes, until golden brown.

Cool and cut in a square
